Instructions
- In a mixing bowl, whisk together the flour, baking powder, and salt.
- Add vegetable oil and warm water to the dry ingredients, stirring until a shaggy dough forms.
- Knead the dough using a stand mixer with a dough hook for about 2 minutes or by hand for 5 minutes until soft.
- Let the dough rest in an oiled bowl covered with plastic wrap for 1 hour.
- Divide the rested dough into 10 equal pieces and shape them into balls; let rest for another 10 minutes.
- Preheat a cast iron skillet over medium-high heat.
- Roll each ball into a thin round (about 6 inches) on a floured surface.
- Cook each tortilla in the skillet for 20–30 seconds on each side until lightly browned.
