- 1 teaspoon fresh thyme leaves (or ½ teaspoon dried thyme)
- 2 tablespoons fresh parsley, chopped for garnish
Instructions
- Preheat your oven to 425°F (220°C).
- In a large mixing bowl, combine the carrots and sweet potatoes. Drizzle with olive oil and honey, then sprinkle with salt, pepper, and thyme. Toss until well-coated.
- Spread the mixture in a single layer on a parchment-lined baking sheet.
- Roast for 25-30 minutes, stirring halfway through until tender and caramelized.
- Remove from the oven; transfer to a serving dish and garnish with chopped parsley before serving.
