Ingredients
- 1 cup unsalted butter, melted
- 2 cups granulated sugar
- 4 large eggs
- 1 teaspoon vanilla extract
- 1 cup all-purpose flour
- 1 cup unsweetened cocoa powder
- ½ teaspoon salt
- 1 cup semi-sweet chocolate chips
- 1 cup mini marshmallows
Instructions
- Preheat oven to 350°F (175°C) and grease a muffin tin.
- In a large bowl, whisk together melted butter and sugar until combined; then add eggs one at a time, mixing well after each addition. Stir in vanilla extract.
- In another bowl, mix flour, cocoa powder, and salt. Gradually add to wet ingredients, stirring until just combined.
- Gently fold in chocolate chips.
- Fill muffin cups about ¾ full with batter. Bake for 18-20 minutes until a toothpick comes out with moist crumbs.
- Press mini marshmallows on top and bake for an additional 3-5 minutes until golden.
- Allow to cool slightly before serving warm.
