  • 4 large whole wheat pitas
  • 1 cup hummus
  • 1 cup shredded mozzarella cheese

Instructions

  1. Heat olive oil in a skillet over medium heat. Sauté zucchini, bell pepper, and mushrooms for about 5-7 minutes until tender.
  2. Preheat your oven broiler to high.
  3. Spread 1/4 cup of hummus over each pita.
  4. Top with the sautéed vegetables and shredded mozzarella cheese.
