- 1 teaspoon extra-virgin olive oil
- 1 medium zucchini (diced)
- 1 small red bell pepper (diced)
- 4–5 oz. white button mushrooms (diced)
- Salt and pepper to taste
- 4 large whole wheat pitas
- 1 cup hummus
- 1 cup shredded mozzarella cheese
Instructions
- Heat olive oil in a skillet over medium heat. Sauté zucchini, bell pepper, and mushrooms for about 5-7 minutes until tender.
- Preheat your oven broiler to high.
- Spread 1/4 cup of hummus over each pita.
- Top with the sautéed vegetables and shredded mozzarella cheese.
- Place on a baking sheet and broil for 1-2 minutes until cheese is melted and bubbly.
- Serve warm or allow to cool for later enjoyment.
