Ingredients
- 4 slices bacon (chopped)
- 1 large onion (diced)
- 2 cloves garlic (minced)
- 4 cups chicken broth
- 3 large potatoes (peeled and diced)
- 4 cups green cabbage (shredded)
- 1 teaspoon salt
- ½ teaspoon ground black pepper
- ½ teaspoon dried thyme
- 1 cup whole milk
- Fresh parsley (for garnish)
Instructions
- In a large pot or Dutch oven, cook chopped bacon over medium heat until crispy. Remove with a slotted spoon and set aside, leaving drippings in the pot.
- Sauté diced onion in the bacon drippings for about 5 minutes until softened. Add minced garlic and cook for an additional minute.
- Pour in chicken broth and add diced potatoes. Bring to a boil, then reduce heat and simmer until potatoes are tender (10-15 minutes).
- Stir in shredded cabbage along with salt, pepper, and thyme. Simmer another 5-7 minutes until cabbage is tender.
- Remove from heat and stir in whole milk for creaminess.
- Serve warm, garnished with crispy bacon and fresh parsley.
