  • 1 tablespoon Grand Marnier (optional)
  • ½ cup granulated sugar
  • 1 cup plain Greek yogurt
  • 1¼ cups heavy cream
  • 1 teaspoon vanilla bean paste or extract
  • 3 tablespoons powdered sugar
  • Fresh mint leaves for garnish

Instructions

  1. In a saucepan, combine blackberries, Grand Marnier (if using), lemon juice, and sugar. Cook over medium heat until bubbling, then reduce heat and simmer for 5-7 minutes until soft.
  2. In a small bowl, mix gelatin with cold water and let it bloom for about 5 minutes. Gently heat until dissolved.
  3. Stir dissolved gelatin into the blackberry mixture and let it cool completely.
  4. In a mixing bowl, whip heavy cream with powdered sugar and vanilla until soft peaks form. Fold in Greek yogurt gently.
  5. Layer blackberry mixture and cream mixture alternately in serving glasses.
  6. Chill for at least 30 minutes before serving. Garnish with extra berries and mint leaves.
