  • 2 cups granulated sugar
  • 4 large eggs
  • 1 teaspoon vanilla extract

  • 1 cup unsweetened cocoa powder
  • ½ teaspoon salt
  • ½ teaspoon baking powder
  • For Mint Frosting: 1 cup powdered sugar, 2 tablespoons unsalted butter, 2 tablespoons heavy cream, ½ teaspoon peppermint extract, green food coloring (optional)
  • For Chocolate Ganache: 1 cup semi-sweet chocolate chips, ½ cup heavy cream

Instructions

  1. Preheat the oven to 350°F (175°C). Grease and line a 9×13 inch baking pan with parchment paper.
  2. In a large bowl, combine melted butter and granulated sugar until smooth. Add eggs one at a time and mix in vanilla extract.
  3. In another bowl, whisk together flour, cocoa powder, salt, and baking powder. Gradually add to wet ingredients until just combined.
  4. Pour the batter into the prepared pan and bake for about 25-30 minutes until a toothpick comes out with moist crumbs. Let cool completely.
  5. For the mint frosting, beat powdered sugar, softened butter, heavy cream, peppermint extract, and food coloring until fluffy. Spread over cooled brownies.
  6. To make ganache, heat chocolate chips and heavy cream in a saucepan until melted and smooth. Pour over frosted brownies.
  7. Allow ganache to set for about 30 minutes before cutting into squares.
