Ingredients
- 1 cup unsalted butter
- 2 cups granulated sugar
- 4 large eggs
- 1 teaspoon vanilla extract
- 1 cup all-purpose flour
- 1 cup unsweetened cocoa powder
- ½ teaspoon salt
- ½ teaspoon baking powder
- For Mint Frosting: 1 cup powdered sugar, 2 tablespoons unsalted butter, 2 tablespoons heavy cream, ½ teaspoon peppermint extract, green food coloring (optional)
- For Chocolate Ganache: 1 cup semi-sweet chocolate chips, ½ cup heavy cream
Instructions
- Preheat the oven to 350°F (175°C). Grease and line a 9×13 inch baking pan with parchment paper.
- In a large bowl, combine melted butter and granulated sugar until smooth. Add eggs one at a time and mix in vanilla extract.
- In another bowl, whisk together flour, cocoa powder, salt, and baking powder. Gradually add to wet ingredients until just combined.
- Pour the batter into the prepared pan and bake for about 25-30 minutes until a toothpick comes out with moist crumbs. Let cool completely.
- For the mint frosting, beat powdered sugar, softened butter, heavy cream, peppermint extract, and food coloring until fluffy. Spread over cooled brownies.
- To make ganache, heat chocolate chips and heavy cream in a saucepan until melted and smooth. Pour over frosted brownies.
- Allow ganache to set for about 30 minutes before cutting into squares.
