  • 1 tablespoon Worcestershire sauce
  • 4 slices bacon
  • 1 large onion, sliced
  • ½ cup Irish stout (like Guinness)
  • ½ cup sharp cheddar cheese, grated
  • ½ cup sour cream
  • 2 tablespoons Dijon mustard
  • 4 brioche burger buns
  • Butter (for toasting buns)

Instructions

  1. In a skillet over medium heat, cook the bacon until crispy. Drain on paper towels.
  2. Remove excess bacon grease, leaving some in the skillet. Add sliced onions and cook until caramelized (10-15 minutes). Pour in Irish stout and simmer until reduced by half; season with salt and pepper.
  3. In a mixing bowl, combine ground beef with Worcestershire sauce, salt, and pepper. Form into four patties.
  4. Preheat grill or skillet over medium-high heat. Cook patties for 3-4 minutes per side; add cheese during the last minute to melt.
  5. Whisk together sour cream, Dijon mustard, and a pinch of salt in a bowl.
  6. Butter inside of brioche buns and toast until golden brown.
