Ingredients
- 4 large lemons
- 2 cups granulated sugar
- 1 cup water
- 1/2 teaspoon vanilla extract (optional)
Instructions
- Wash and dry the lemons thoroughly. Zest each lemon carefully and juice them, discarding seeds.
- In a large pot, combine lemon juice, zest, sugar, and water. Stir until the sugar dissolves.
- Bring to a boil over medium heat, then reduce heat and simmer for 30-40 minutes until thickened.
- To check consistency, place a small amount on a cold plate; if it gels after cooling slightly, it's ready.
- Remove from heat and let cool slightly before pouring into sterilized jars. Seal tightly and cool completely.
