- 1 pound Italian sausage (mild or spicy)
- 1 tablespoon olive oil
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 2 carrots, diced
- 2 celery stalks, diced
- 1 can (14.5 ounces) diced tomatoes (undrained)
- 4 cups chicken or vegetable broth
- 1 cup uncooked pasta (ditalini or small shells)
- 2 cups fresh spinach (or kale)
- Salt and pepper to taste
- Grated Parmesan cheese for serving
Instructions
- In a large pot, heat olive oil over medium heat. Add the Italian sausage, breaking it apart as it cooks until browned. Remove and set aside.
- In the same pot, sauté onion, garlic, carrots, and celery for 5-7 minutes until tender. Stir in oregano, basil, and optional red pepper flakes.
- Add diced tomatoes and broth; bring to a boil then reduce to simmer.
- Stir in uncooked pasta and cook according to package instructions until al dente.
- Return sausage to the pot along with spinach; cook for an additional 2-3 minutes until spinach wilts.
- Season with salt and pepper before serving hot.
