  • 1 tablespoon olive oil
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 1 can (14.5 ounces) diced tomatoes (undrained)
  • 4 cups chicken or vegetable broth
  • 1 cup uncooked pasta (ditalini or small shells)
  • 2 cups fresh spinach (or kale)
  • Salt and pepper to taste
  • Grated Parmesan cheese for serving

Instructions

  1. In a large pot, heat olive oil over medium heat. Add the Italian sausage, breaking it apart as it cooks until browned. Remove and set aside.
  2. In the same pot, sauté onion, garlic, carrots, and celery for 5-7 minutes until tender. Stir in oregano, basil, and optional red pepper flakes.
  3. Add diced tomatoes and broth; bring to a boil then reduce to simmer.
  4. Stir in uncooked pasta and cook according to package instructions until al dente.
  5. Return sausage to the pot along with spinach; cook for an additional 2-3 minutes until spinach wilts.
  6. Season with salt and pepper before serving hot.
