  • 12 jalapeño peppers, seeded and finely diced
  • 2 teaspoons paprika
  • 1 teaspoon kosher salt
  • 1/2 teaspoon fresh ground pepper
  • 3/4 cup shredded pepper jack cheese
  • 1/2 cup chopped fresh cilantro
  • Vegetable or olive oil
  • 8 slices of cheese (optional; I use American or white cheddar)
  • 8 hamburger buns
  • 1 head of roasted garlic
  • 1/3 cup mayonnaise
  • Salt and pepper to taste
  • 2 large avocados
  • Juice of 1 lime
  • 2 tablespoons cilantro, finely chopped

Instructions

  1. Prepare the roasted garlic mayo by mixing roasted garlic with mayonnaise, seasoning with salt and pepper, then refrigerate.
  2. Preheat your grill to medium-high heat.
  3. In a mixing bowl, combine ground chicken, minced garlic, diced onion, jalapeños, paprika, salt, pepper, shredded cheese, and cilantro. Mix until just combined.
  4. Divide the mixture into eight equal patties.
  5. Lightly oil the grill grate using a paper towel dipped in vegetable oil.
  6. Grill the patties for about 8 minutes on each side until they reach an internal temperature of 165°F. Add cheese slices during the last minute if desired.
