Ingredients
- 2 lbs ground chicken
- 4 garlic cloves, minced
- 1/2 onion, finely diced
- 1–2 jalapeño peppers, seeded and finely diced
- 2 teaspoons paprika
- 1 teaspoon kosher salt
- 1/2 teaspoon fresh ground pepper
- 3/4 cup shredded pepper jack cheese
- 1/2 cup chopped fresh cilantro
- Vegetable or olive oil
- 8 slices of cheese (optional; I use American or white cheddar)
- 8 hamburger buns
- 1 head of roasted garlic
- 1/3 cup mayonnaise
- Salt and pepper to taste
- 2 large avocados
- Juice of 1 lime
- 2 tablespoons cilantro, finely chopped
Instructions
- Prepare the roasted garlic mayo by mixing roasted garlic with mayonnaise, seasoning with salt and pepper, then refrigerate.
- Preheat your grill to medium-high heat.
- In a mixing bowl, combine ground chicken, minced garlic, diced onion, jalapeños, paprika, salt, pepper, shredded cheese, and cilantro. Mix until just combined.
- Divide the mixture into eight equal patties.
- Lightly oil the grill grate using a paper towel dipped in vegetable oil.
- Grill the patties for about 8 minutes on each side until they reach an internal temperature of 165°F. Add cheese slices during the last minute if desired.
- Serve on toasted hamburger buns with your choice of toppings.
