Ingredients
- 2 cups shredded pepper jack cheese
- 4 ounces softened cream cheese
- 2 diced jalapeños (seeds removed)
- ½ cup diced green onion
- 1 cup all-purpose flour
- 1 large egg
- 1 cup buttermilk
- 1½ – 2 cups breadcrumbs
- Vegetable oil for frying
Instructions
- In a large bowl, mix pepper jack cheese, cream cheese, jalapeños, and green onions until well combined.
- Roll mixture into small balls (about one inch in diameter) and place on a foil-lined baking sheet.
- Chill the balls in the refrigerator for at least 30 minutes.
- Set up a dredging station with flour in one dish, whisked egg and buttermilk in another, and seasoned breadcrumbs in the third.
- Dredge each ball in flour, dip into the egg mixture, coat with breadcrumbs, then repeat for extra crunch.
- Heat vegetable oil in a frying pan over medium heat. Fry balls until golden brown (about 3-4 minutes).
- Drain on paper towels before serving.
