  • 2 cups shredded pepper jack cheese
  • 4 ounces softened cream cheese
  • 2 diced jalapeños (seeds removed)
  • ½ cup diced green onion
  • 1 cup all-purpose flour
  • 1 large egg
  • 1 cup buttermilk
  • 2 cups breadcrumbs
  • Vegetable oil for frying

Instructions

  1. In a large bowl, mix pepper jack cheese, cream cheese, jalapeños, and green onions until well combined.
  2. Roll mixture into small balls (about one inch in diameter) and place on a foil-lined baking sheet.
  3. Chill the balls in the refrigerator for at least 30 minutes.
  4. Set up a dredging station with flour in one dish, whisked egg and buttermilk in another, and seasoned breadcrumbs in the third.
  5. Dredge each ball in flour, dip into the egg mixture, coat with breadcrumbs, then repeat for extra crunch.
  6. Heat vegetable oil in a frying pan over medium heat. Fry balls until golden brown (about 3-4 minutes).
  7. Drain on paper towels before serving.
