- 2 large russet potatoes
- 1 cup all-purpose flour
- 1 teaspoon salt
- 1 teaspoon ground black pepper
- 1 cup shredded cheese (mozzarella or cheddar)
- 2 large eggs, beaten
- 1 cup breadcrumbs (preferably panko)
- Oil for frying
- Fresh parsley, chopped (for garnish)
Instructions
- Soak potato sticks in cold water for at least 30 minutes to remove excess starch. Drain and pat dry.
- Cut cheese into small pieces that can fit inside the potato sticks.
- Prepare three bowls: one with flour mixed with salt and pepper, one with beaten eggs, and one with breadcrumbs.
- Insert cheese into each potato stick and coat in flour mix, dip in egg, then roll in breadcrumbs.
- Heat oil in a deep skillet over medium-high heat. Fry sticks in batches until golden brown (4-5 minutes). Drain on paper towels.
- Serve hot garnished with parsley and your favorite dipping sauces.
