  • 1/2 cup unsalted butter, melted
  • 3 packages (8 ounces each) full-fat cream cheese
  • 1 cup full-fat sour cream
  • 1 and 1/4 cups granulated sugar
  • 1 teaspoon pure vanilla extract
  • 2 tablespoons key lime zest
  • 3 large eggs
  • 2 large egg yolks
  • 1/4 cup heavy cream
  • 1/2 cup key lime juice
  • 2 teaspoons all-purpose flour
  • 1/2 teaspoon ground ginger
  • 1/4 teaspoon salt

Instructions

  1. Preheat your oven to 350°F (175°C). Line a 9×13-inch baking pan with foil, leaving an overhang for easy removal.
  2. In a bowl, mix graham cracker crumbs, sugar, melted butter, ground ginger, and salt. Press into the bottom of the prepared pan and bake for 10 minutes.
  3. Reduce oven temperature to 325°F (160°C). In a mixing bowl, beat cream cheese and sour cream until smooth. Add sugar, vanilla extract, and key lime zest; mix well.
  4. Add eggs one at a time on low speed until just combined. Gently fold in heavy cream, key lime juice, and flour until incorporated.
  5. Pour the filling over the crust and spread evenly. Bake for 38-40 minutes until edges are set but center is slightly jiggly.
  6. Allow to cool at room temperature for one hour before chilling in the refrigerator for at least five hours or overnight.
