- 2 cups graham cracker crumbs
- 1/3 cup granulated sugar
- 1/2 cup unsalted butter, melted
- 3 packages (8 ounces each) full-fat cream cheese
- 1 cup full-fat sour cream
- 1 and 1/4 cups granulated sugar
- 1 teaspoon pure vanilla extract
- 2 tablespoons key lime zest
- 3 large eggs
- 2 large egg yolks
- 1/4 cup heavy cream
- 1/2 cup key lime juice
- 2 teaspoons all-purpose flour
- 1/2 teaspoon ground ginger
- 1/4 teaspoon salt
Instructions
- Preheat your oven to 350°F (175°C). Line a 9×13-inch baking pan with foil, leaving an overhang for easy removal.
- In a bowl, mix graham cracker crumbs, sugar, melted butter, ground ginger, and salt. Press into the bottom of the prepared pan and bake for 10 minutes.
- Reduce oven temperature to 325°F (160°C). In a mixing bowl, beat cream cheese and sour cream until smooth. Add sugar, vanilla extract, and key lime zest; mix well.
- Add eggs one at a time on low speed until just combined. Gently fold in heavy cream, key lime juice, and flour until incorporated.
- Pour the filling over the crust and spread evenly. Bake for 38-40 minutes until edges are set but center is slightly jiggly.
- Allow to cool at room temperature for one hour before chilling in the refrigerator for at least five hours or overnight.
