  • 9 lasagna noodles
  • 15 ounces ricotta cheese
  • 1 ½ cups fresh spinach, chopped
  • 1 cup grated Parmesan cheese
  • 2 cups marinara sauce
  • 1 ½ cups shredded mozzarella cheese
  • Salt and pepper to taste

Instructions

  1. Cook lasagna noodles in a large pot of salted boiling water until al dente. Drain and lay flat to cool.
  2. In a mixing bowl, combine ricotta, spinach, ½ cup Parmesan cheese, salt, and pepper until well mixed.
  3. Preheat oven to 375°F (190°C). Spread 1 cup marinara sauce in a baking dish.
  4. Spread filling on each noodle, roll tightly, and place seam-side down in the dish. Repeat until all noodles are used.
  5. Pour remaining marinara sauce over the roll-ups and sprinkle with mozzarella and remaining Parmesan.
  6. Cover with foil and bake for 25 minutes. Remove foil and bake for an additional 15 minutes until bubbly.
