- 9 lasagna noodles
- 15 ounces ricotta cheese
- 1 ½ cups fresh spinach, chopped
- 1 cup grated Parmesan cheese
- 2 cups marinara sauce
- 1 ½ cups shredded mozzarella cheese
- Salt and pepper to taste
Instructions
- Cook lasagna noodles in a large pot of salted boiling water until al dente. Drain and lay flat to cool.
- In a mixing bowl, combine ricotta, spinach, ½ cup Parmesan cheese, salt, and pepper until well mixed.
- Preheat oven to 375°F (190°C). Spread 1 cup marinara sauce in a baking dish.
- Spread filling on each noodle, roll tightly, and place seam-side down in the dish. Repeat until all noodles are used.
- Pour remaining marinara sauce over the roll-ups and sprinkle with mozzarella and remaining Parmesan.
- Cover with foil and bake for 25 minutes. Remove foil and bake for an additional 15 minutes until bubbly.
