- 2 1/2 cups all-purpose flour
- 1/2 cup granulated sugar
- 1 Tbsp baking powder
- 1/2 tsp salt
- 2 tsp dried culinary lavender
- 1/2 cup frozen butter (grated)
- 1/2 cup buttermilk
- 2 large eggs
- 2 tsp vanilla extract
- Zest from 1 lemon
Instructions
- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- In a mixing bowl, combine the flour, sugar, baking powder, salt, and lavender.
- Grate the frozen butter into the dry ingredients and mix until crumbly.
- In another bowl, whisk together the buttermilk, eggs, vanilla extract, honey, and lemon zest.
- Add the wet mixture to the dry ingredients and stir until just combined.
- Transfer dough to a floured surface; gently shape into a disk about six inches wide.
- Cut into eight wedges and place on the prepared baking sheet.
- Brush each scone with egg wash for color and bake for about 15 minutes or until golden brown.
- Cool for 15 minutes before glazing.
