  • 2 cups all-purpose flour
  • 2 cups sugar
  • ½ cup powdered sugar
  • 4 large eggs
  • 6 tablespoons freshly squeezed lemon juice
  • 1 teaspoon dried culinary lavender
  • Freshly grated lemon zest
  • ½ teaspoon vanilla extract
  • ¼ teaspoon lavender extract
  • ½ teaspoon salt

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, combine softened butter, all-purpose flour, powdered sugar, and vanilla extract. Mix until crumbly.
  3. Press the mixture into a greased 9×13 inch baking dish and bake for about 20 minutes.
  4. While the crust bakes, whisk together sugar and dried lavender to create lavender sugar.
  5. In another bowl, beat eggs and lemon juice. Gradually add lavender sugar, flour, lemon zest, vanilla extract, lavender extract, and salt until well combined.
  6. Pour the filling over the baked crust and return to the oven for an additional 25-30 minutes.
  7. Allow cooling completely before slicing into squares.
