- 1 cup unsalted butter (softened)
- 2 cups all-purpose flour
- 2 cups sugar
- ½ cup powdered sugar
- 4 large eggs
- 6 tablespoons freshly squeezed lemon juice
- 1 teaspoon dried culinary lavender
- Freshly grated lemon zest
- ½ teaspoon vanilla extract
- ¼ teaspoon lavender extract
- ½ teaspoon salt
Instructions
- Preheat your oven to 350°F (175°C).
- In a mixing bowl, combine softened butter, all-purpose flour, powdered sugar, and vanilla extract. Mix until crumbly.
- Press the mixture into a greased 9×13 inch baking dish and bake for about 20 minutes.
- While the crust bakes, whisk together sugar and dried lavender to create lavender sugar.
- In another bowl, beat eggs and lemon juice. Gradually add lavender sugar, flour, lemon zest, vanilla extract, lavender extract, and salt until well combined.
- Pour the filling over the baked crust and return to the oven for an additional 25-30 minutes.
- Allow cooling completely before slicing into squares.
