- 1 cup icing sugar (for glaze)
- 1/4 cup freshly squeezed lemon juice (for glaze)
- 1 teaspoon vanilla extract (for glaze)
- Milk, as needed (to adjust consistency)
Instructions
- Preheat your oven to 350°F (175°C) and grease a loaf pan.
- In a bowl, whisk together flour, baking powder, and salt. In another bowl, mix yogurt, sugar, eggs, lemon zest, vanilla extract, and oil until smooth.
- Combine wet and dry ingredients gently without overmixing. Fold in floured blueberries.
- Pour batter into the prepared pan and bake for 50–70 minutes or until a toothpick comes out clean.
- Prepare the lemon syrup while baking: heat lemon juice and sugar until dissolved.
- Cool the loaf slightly before soaking with syrup. Once cooled completely, drizzle with lemon glaze.
