Ingredients
- 60 Nilla Wafers
- 1/3 cup butter, melted
- 1/4 cup sugar
- 1 1/4 cups heavy cream
- 1/2 cup powdered sugar
- 12 ounces cream cheese, softened
- 14 ounces sweetened condensed milk
- 1/4 cup lemon juice
- 2 tablespoons lemon zest
Instructions
- Preheat oven to 375°F (190°C). Crush vanilla wafers in a food processor.
- Mix crumbs with melted butter and sugar; press into a pie pan. Bake for 6-8 minutes until golden. Cool and refrigerate for at least 1 hour.
- Whip heavy cream until stiff peaks form; set aside.
- In another bowl, beat cream cheese, sweetened condensed milk, lemon juice, and zest until smooth. Gently fold in whipped cream.
- Fill the cooled crust with the lemon mixture and refrigerate for at least 1 hour before serving.
