Instructions
- In a mixing bowl, whisk together olive oil, lemon juice, lemon zest, salt, pepper, garlic powder, and onion powder.
- Coat the chicken thighs in the marinade and refrigerate for at least 30 minutes (or overnight for enhanced flavor).
- Preheat your oven to 400°F (200°C).
- Remove chicken from marinade and place skin-side up in a baking dish. Bake for 35-40 minutes until the internal temperature reaches 165°F (75°C) and the skin is crispy.
- Let rest for 5 minutes before serving with a sprinkle of fresh parsley.
