  • 5 oz fresh mozzarella
  • 2 tbsp extra virgin olive oil
  • 1 tbsp lemon juice
  • 1 tsp lemon zest
  • 1 small garlic clove, grated
  • Fresh parsley, chopped
  • Salt and black pepper

Instructions

  1. Prepare the cheese by slicing fresh mozzarella into ½-inch thick pieces.
  2. Shape the dough on parchment paper into a rectangle (approximately 9×13 inches).
  3. In a jar, mix olive oil, lemon juice, lemon zest, grated garlic, chopped parsley, salt, and pepper to create the brine.
  4. Dimple the stretched dough and evenly spread the brine over it. Top with mozzarella.
  5. Bake on a preheated pizza stone for 8-10 minutes until golden brown.
  6. Finish with additional lemon juice, parmesan cheese, parsley, and black pepper before serving.
