- 1 ball easy pizza dough (or store-bought)
- 5 oz fresh mozzarella
- 2 tbsp extra virgin olive oil
- 1 tbsp lemon juice
- 1 tsp lemon zest
- 1 small garlic clove, grated
- Fresh parsley, chopped
- Salt and black pepper
Instructions
- Prepare the cheese by slicing fresh mozzarella into ½-inch thick pieces.
- Shape the dough on parchment paper into a rectangle (approximately 9×13 inches).
- In a jar, mix olive oil, lemon juice, lemon zest, grated garlic, chopped parsley, salt, and pepper to create the brine.
- Dimple the stretched dough and evenly spread the brine over it. Top with mozzarella.
- Bake on a preheated pizza stone for 8-10 minutes until golden brown.
- Finish with additional lemon juice, parmesan cheese, parsley, and black pepper before serving.
