Ingredients
- 4 large russet potatoes
- 1 pound sirloin steak (cut into bite-sized pieces)
- 1 cup shredded cheddar cheese
- 4 slices cooked bacon (crumbled)
- ½ cup sour cream
- Fresh chives (for garnish)
Instructions
- Preheat oven to 400°F (200°C). Scrub potatoes, poke holes with a fork, rub with olive oil and salt. Bake for 45-60 minutes until tender.
- Meanwhile, heat a skillet over medium-high heat. Season steak with salt, pepper, garlic powder, and onion powder. Add olive oil to the skillet and cook steak bites for 3-5 minutes until browned.
- After baking, slice open each potato and fluff the insides with a fork. Top with cheese, bacon, and sour cream.
- Place cooked steak bites on top of each potato and garnish with chives before serving.
