- ½ cup unsalted butter
- 1 cup all-purpose flour
- 1 cup granulated sugar
- 1 cup buttermilk
- 1 tsp vanilla extract
- 2 tbsp lemon zest (approx. 2 lemons)
- 1 can (22 oz) lemon pie filling
- ½ cup lemon curd
Instructions
- Preheat your oven to 350°F.
- Melt the butter in a microwave-safe bowl.
- Pour melted butter into a greased 9×9 baking dish.
- In a large bowl, mix flour, sugar, buttermilk, vanilla, and lemon zest until smooth.
- Pour the batter over the butter in the baking dish without stirring.
- In another bowl, mix lemon pie filling and lemon curd until smooth; pour over the batter.
- Bake for 55-60 minutes until golden brown on top.
- Let cool slightly before serving; garnish as desired.
