Instructions
- In a large mixing bowl, combine the diced mangoes, cucumber, red bell pepper, red onion, and cherry tomatoes.
- Gently fold in the cilantro and mint until well mixed.
- In a small bowl, whisk together lime juice, honey (or agave syrup), salt, and pepper until fully combined.
- Pour the dressing over the salad mixture and toss gently to coat evenly.
- Serve immediately or refrigerate for up to 30 minutes to let flavors meld.
