Ingredients
- 1 pound Brussels sprouts, trimmed and halved
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1 teaspoon ground black pepper
- 6 slices bacon, chopped
- ¼ cup maple syrup
- 2 tablespoons balsamic vinegar
- Optional: red pepper flakes, chopped pecans
Instructions
- Preheat oven to 400°F (200°C).
- In a large bowl, toss halved Brussels sprouts with olive oil, salt, and pepper until coated.
- Cook chopped bacon in a skillet over medium heat until crispy; set aside on paper towels.
- In the skillet with drippings, add Brussels sprouts in a single layer and roast for 20-25 minutes, stirring halfway through.
- Whisk together maple syrup, balsamic vinegar, and optional red pepper flakes; drizzle over roasted sprouts and toss well.
- Stir in the crispy bacon (and pecans if using) and return to the oven for an additional 5 minutes.
- Serve warm and enjoy!
