Instructions
- Preheat your oven to 400°F (200°C).
- Cut the pumpkin in half, remove seeds, and slice into 1-inch wedges.
- Arrange the wedges on a parchment-lined baking sheet.
- In a bowl, whisk together olive oil, maple syrup, salt, pepper, cinnamon, and nutmeg. Drizzle over the wedges and toss to coat.
- Roast for 25-30 minutes, flipping halfway through until golden and tender.
- Garnish with fresh parsley before serving warm.
