- 2 cans (15 oz each) butter beans, drained and rinsed
- 2 tablespoons olive oil
- 1 medium onion, finely chopped
- 3 cloves garlic, minced
- 1 teaspoon dried thyme
- 1 teaspoon smoked paprika
- ½ cup heavy cream
- 1 cup vegetable broth
- Fresh parsley for garnish
Instructions
- Heat olive oil in a large skillet over medium heat. Sauté the chopped onion until softened (5-6 minutes).
- Add minced garlic, thyme, smoked paprika, salt, and black pepper; cook for 1-2 minutes until fragrant.
- Stir in the butter beans and vegetable broth; bring to a simmer.
- Mix in heavy cream and cook for another 5-7 minutes until thickened.
- Garnish with fresh parsley and serve warm with lemon wedges.
