- 4 boneless, skinless chicken breasts
- 1 teaspoon salt
- 1 teaspoon ground black pepper
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- 1 cup sun-dried tomatoes, chopped
- 1 cup heavy cream
- 1 cup grated parmesan cheese
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- 1 tablespoon fresh parsley, chopped
Instructions
- Season the chicken breasts with salt and pepper on both sides.
- In a large skillet, heat olive oil over medium-high heat. Sear the chicken for 6-7 minutes per side until golden brown. Remove from skillet and set aside.
- In the same skillet, sauté minced garlic for about 30 seconds until fragrant. Add chopped sun-dried tomatoes and cook for another 1-2 minutes.
- Reduce heat to medium-low and stir in heavy cream and parmesan cheese until melted and slightly thickened. Add dried oregano and basil.
- Return the chicken to the skillet, coating it well with the sauce. Simmer for an additional 2-3 minutes.
- Serve garnished with fresh parsley.
