Ingredients
- 1 cup butter (melted)
- 1 pound powdered sugar
- 1 tablespoon vanilla extract
- 14 ounces shredded coconut (sweetened)
- 14 ounces sweetened condensed milk
- 10 ounces maraschino cherries (drained and chopped)
- 3 cups finely chopped pecans
- 16 ounces candy coating
Instructions
- Chop cherries into small pieces and blot dry with paper towels.
- In a large mixing bowl, combine melted butter, powdered sugar, vanilla extract, shredded coconut, condensed milk, cherries, and pecans. Mix well until combined.
- Refrigerate the mixture for at least two hours to firm up.
- Scoop out portions of the mixture and roll them into walnut-sized balls.
- Chill the formed balls for another 20 minutes.
- Melt candy coating according to package instructions in a microwave-safe bowl.
- Dip each ball into melted chocolate, allowing excess to drip off before placing on parchment-lined baking sheet.
- Allow candies to set completely at room temperature before storing in an airtight container.
