  • 2 large eggs
  • 1 ½ cups milk
  • 2 tablespoons melted butter
  • ½ teaspoon salt
  • 1 pound ground beef
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • ½ teaspoon paprika
  • ½ teaspoon ground black pepper
  • 1 tablespoon fresh parsley, chopped
  • Sour cream
  • Chopped chives

Instructions

  1. In a mixing bowl, whisk together flour, eggs, milk, melted butter, and salt until smooth. Let the batter rest for 15 minutes.
  2. Heat a non-stick skillet over medium heat; pour about ¼ cup of batter into the skillet, swirling to spread evenly. Cook for 1-2 minutes until golden, then flip and cook another minute. Repeat until all batter is used.
  3. In another skillet, cook ground beef over medium heat until browned; drain excess fat. Stir in garlic powder, onion powder, paprika, black pepper, and parsley; cook for an additional 2-3 minutes.
  4. Place a few tablespoons of beef filling on one half of each crepe; fold the other half over to enclose the filling.
  5. Garnish with sour cream and chives if desired.
