- 1 cup all-purpose flour
- 2 large eggs
- 1 ½ cups milk
- 2 tablespoons melted butter
- ½ teaspoon salt
- 1 pound ground beef
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- ½ teaspoon paprika
- ½ teaspoon ground black pepper
- 1 tablespoon fresh parsley, chopped
- Sour cream
- Chopped chives
Instructions
- In a mixing bowl, whisk together flour, eggs, milk, melted butter, and salt until smooth. Let the batter rest for 15 minutes.
- Heat a non-stick skillet over medium heat; pour about ¼ cup of batter into the skillet, swirling to spread evenly. Cook for 1-2 minutes until golden, then flip and cook another minute. Repeat until all batter is used.
- In another skillet, cook ground beef over medium heat until browned; drain excess fat. Stir in garlic powder, onion powder, paprika, black pepper, and parsley; cook for an additional 2-3 minutes.
- Place a few tablespoons of beef filling on one half of each crepe; fold the other half over to enclose the filling.
- Garnish with sour cream and chives if desired.
