Ingredients

  • 1 box store bought pie dough (containing 2 sheets)
  • 2 tbsp unsalted butter (regular or plant-based)
  • 2 1/2 cups finely chopped fuji or honeycrisp apples (about 2 large apples)
  • 1/4 cup (50g) light brown sugar, packed
  • 1 tsp ground cinnamon
  • Juice of 1/2 lemon
  • 1/2 tsp cornstarch (mixed with 1 tbsp water)
  • 1 large egg
  • 1/2 cup (100g) granulated sugar
  • 1 tsp ground cinnamon

Instructions

  1. Preheat your oven to 400°F and line a baking sheet with parchment paper.
  2. In a saucepan, melt the butter over medium heat and add apples, brown sugar, cinnamon, and lemon juice. Cook until apples are tender.
  3. Mix cornstarch with water and stir into the apple mixture to thicken. Let cool.
  4. Roll out pie dough on a floured surface and cut into desired shapes.
  5. On half of the cut shapes, spoon some cooled filling and brush edges with egg wash.
  6. Top with another dough cutout and seal edges by crimping with a fork; brush tops with more egg wash and sprinkle with cinnamon sugar.
  7. Bake for 12-14 minutes until golden brown. Allow to cool before serving.
