  • 6 to 8 tablespoons ice water
  • 3 cups Granny Smith apples, peeled, cored, and diced
  • ½ cup granulated sugar
  • 1 teaspoon cinnamon
  • ¼ teaspoon nutmeg
  • 1 tablespoon lemon juice
  • 1 tablespoon cornstarch
  • 1 egg, beaten (for egg wash)
  • 1 tablespoon coarse sugar (for topping)

Instructions

  1. Make the pie crust by mixing flour, salt, and sugar. Cut in cold butter until crumbly. Add ice water gradually until dough forms. Chill for at least 1 hour.
  2. Prepare the filling by mixing diced apples with sugar, cinnamon, nutmeg, lemon juice, and cornstarch.
  3. Preheat oven to 375°F (190°C). Roll out dough into circles for muffin tin molds.
  4. Assemble the pies by pressing dough into muffin tin cups, filling with apple mixture, topping with another dough circle, sealing edges, and cutting steam vents.
  5. Brush tops with beaten egg and sprinkle with coarse sugar.
  6. Bake for 20-25 minutes until golden brown.
