- 3 cups Granny Smith apples, peeled, cored, and diced
- ½ cup granulated sugar
- 1 teaspoon cinnamon
- ¼ teaspoon nutmeg
- 1 tablespoon lemon juice
- 1 tablespoon cornstarch
- 1 egg, beaten (for egg wash)
- 1 tablespoon coarse sugar (for topping)
Instructions
- Make the pie crust by mixing flour, salt, and sugar. Cut in cold butter until crumbly. Add ice water gradually until dough forms. Chill for at least 1 hour.
- Prepare the filling by mixing diced apples with sugar, cinnamon, nutmeg, lemon juice, and cornstarch.
- Preheat oven to 375°F (190°C). Roll out dough into circles for muffin tin molds.
- Assemble the pies by pressing dough into muffin tin cups, filling with apple mixture, topping with another dough circle, sealing edges, and cutting steam vents.
- Brush tops with beaten egg and sprinkle with coarse sugar.
- Bake for 20-25 minutes until golden brown.
