Ingredients
- 8 large lemons, sliced
- 1 cup sugar
- 10 sprigs fresh mint
- 2 sprigs fresh rosemary
- ½ vanilla bean or 2 tsp vanilla extract
- 8 cups cold water
- Ice for serving
Instructions
- In a bowl with a fine-mesh strainer, combine lemon slices, sugar, mint, rosemary, and vanilla.
- Gently massage until the lemons release juice and herbs are coated in sugar.
- Cover and refrigerate for at least 3–4 hours or overnight.
- Strain the mixture to extract juice into a pitcher.
- Add cold water to the juice concentrate and stir well.
- Serve over ice and garnish with fresh herbs.
