- 1 ½ cups graham cracker crumbs
- ½ cup unsalted butter, melted
- 8 ounces cream cheese, softened
- 1 cup powdered sugar
- 1 tablespoon vodka
- 1 cup fresh lemon juice (about 4–6 lemons)
- Whipped cream for topping
Instructions
- Preheat your oven to 350°F (175°C). Combine graham cracker crumbs, melted butter, and sugar in a bowl. Press into a greased 9-inch square baking dish and bake for 8-10 minutes until golden. Let cool.
- In a mixing bowl, beat cream cheese until smooth. Gradually add powdered sugar, vodka, and vanilla until creamy. Fold in whipped cream gently. Spread over cooled crust and refrigerate.
- For the lemon layer, whisk together lemon juice, sugar, cornstarch, and water in a saucepan over medium heat until bubbling. Temper egg yolks with hot mixture before returning to the saucepan until thickened. Stir in butter and cool slightly before pouring over cream cheese layer.
- Chill for at least 4 hours before serving topped with whipped cream and lemon slices.
