Instructions

  2. In a mixing bowl, beat cream cheese until smooth. Gradually add powdered sugar, vodka, and vanilla until creamy. Fold in whipped cream gently. Spread over cooled crust and refrigerate.
  3. For the lemon layer, whisk together lemon juice, sugar, cornstarch, and water in a saucepan over medium heat until bubbling. Temper egg yolks with hot mixture before returning to the saucepan until thickened. Stir in butter and cool slightly before pouring over cream cheese layer.
