- 1 pound boneless, skinless chicken breasts
- 8 ounces fresh mushrooms
- 1 large green bell pepper
- 1 large red bell pepper
- 2 tablespoons olive oil
- 2 teaspoons minced garlic
- ¼ cup chicken broth
- 2 tablespoons soy sauce
- Fresh parsley for garnish
Instructions
- Season the chicken strips with salt and black pepper in a mixing bowl.
- Heat olive oil in a large skillet over medium-high heat. Add chicken and cook until browned (5-7 minutes). Remove and set aside.
- In the same skillet, sauté sliced mushrooms and bell peppers until softened (about 5 minutes). Add garlic and thyme, cooking for an additional minute.
- Return chicken to the skillet, pour in chicken broth and soy sauce, then simmer for 3-4 minutes until the sauce thickens slightly.
- Serve warm, garnished with parsley.
