Ingredients
- 8 ounces cream cheese, softened
- ½ cup canned pumpkin puree
- ½ cup powdered sugar
- 1 teaspoon vanilla extract
- 1 teaspoon pumpkin pie spice
- 1 cup graham cracker crumbs
- ¼ cup chocolate chips (optional)
Instructions
- In a large mixing bowl, combine cream cheese, pumpkin puree, powdered sugar, vanilla extract, and pumpkin pie spice. Mix until smooth.
- Cover and refrigerate for about 30 minutes to firm up the mixture.
- Scoop tablespoon-sized portions and roll into balls. If desired, mix in chocolate chips.
- Roll each ball in graham cracker crumbs until well coated.
- Place on a parchment-lined baking sheet and refrigerate for another 30 minutes before serving.
