Ingredients
- 8 oz mascarpone cheese
- 1 cup heavy whipping cream
- ½ cup powdered sugar
- 1 teaspoon vanilla extract
- 1 cup brewed coffee, cooled
- 12–16 ladyfinger cookies
- 2 tablespoons cocoa powder (for dusting)
Instructions
- In a large mixing bowl, combine mascarpone cheese, heavy whipping cream, powdered sugar, and vanilla extract. Whip until stiff peaks form.
- Briefly dip each ladyfinger into the cooled coffee. Ensure they are moist but not soggy.
- Lay soaked ladyfingers side by side on parchment paper and spread half of the cream mixture over them.
- Using the parchment paper, roll the ladyfinger layer away from you to form a log shape. Wrap tightly in parchment paper and refrigerate for at least 4 hours or overnight.
- Unwrap, dust with cocoa powder, slice into rounds, and serve.
