- 1 cup unsalted butter, room temperature
- 1 cup brown sugar, packed (light or dark)
- ½ cup white granulated sugar
- 1 teaspoon pure vanilla extract
- ½ tablespoon molasses (not blackstrap)
- 2 large eggs, room temperature
- 1 ¾ cups all-purpose flour
- 1 teaspoon baking soda
- 1 teaspoon salt
- 1 teaspoon ground cinnamon
- ½ teaspoon pumpkin pie spice (or nutmeg)
- 3 cups old fashioned oats
- 1 cup unsalted butter, room temperature (for frosting)
- 7 oz marshmallow fluff/cream
- 1 cup powdered sugar, sifted
- 1 teaspoon pure vanilla extract (for frosting)
- ¼ teaspoon salt (for frosting)
Instructions
- Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
- In a bowl, whisk together flour, baking soda, salt, cinnamon, and oats.
- In a mixer, beat butter and sugars until creamy; mix in vanilla, molasses, and eggs.
- Gradually combine dry ingredients until just incorporated. Chill dough for 15 minutes.
- Scoop dough onto prepared sheets and bake for 8-9 minutes. Cool on racks.
- For frosting, beat butter and marshmallow fluff until fluffy; mix in powdered sugar and salt.
- Spread frosting on half of the cookies and sandwich with remaining cookies.
