- 2 boneless, skinless chicken breasts
- 1 tsp onion powder
- 1 tsp garlic powder
- 1 tsp dried thyme
- 1½ cups jasmine rice
- Juice of 1 lemon
- 3 cups chicken stock
- Olive oil
Instructions
- Marinate chicken with spices and olive oil for at least 30 minutes.
- Sear marinated chicken in a large deep pan over medium-high heat for 1–2 minutes on each side.
- Deglaze the pan with water, then add onion and garlic until softened.
- Stir in butter and jasmine rice, then mix in lemon juice and chicken stock.
- Return chicken to the pan, cover, and cook on low for 15 minutes.
- Let rest off heat for an additional 10 minutes before fluffing the rice and serving.
