Ingredients
- 1 pound smoked sausage (kielbasa or Italian)
- 4 medium potatoes
- 1 large red bell pepper
- 1 large green bell pepper
- 1 medium onion
- 3 cloves garlic
- 2 tablespoons olive oil
- Seasonings: salt, black pepper, paprika, oregano
- Fresh parsley for garnish
Instructions
- Prep all ingredients by washing and chopping the potatoes, bell peppers, onion, and sausage.
- Heat olive oil in a large skillet over medium heat. Add sliced sausage and cook until browned (about 5-7 minutes). Remove and set aside.
- In the same skillet, add diced potatoes, onion, and bell peppers. Season with salt, pepper, paprika, and oregano. Cook for 10-15 minutes until tender.
- Stir in minced garlic and cook for an additional minute. Return the sausage to the skillet and mix well; heat through for another 2-3 minutes.
- Serve hot garnished with fresh parsley.
