Ingredients
- 4 large sweet onions (Vidalia or Walla Walla)
- 4 cups vegetable or chicken broth
- 1 tablespoon salt
- 1 teaspoon ground black pepper
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon smoked paprika
- 2 tablespoons olive oil
- 1 tablespoon fresh thyme leaves (or 1 teaspoon dried thyme)
- 1 tablespoon fresh parsley, chopped (for garnish)
Instructions
- Peel the onions and remove their tops and bottoms; leave them whole or quarter them based on preference.
- In a large pot, combine broth, salt, black pepper, garlic powder, onion powder, smoked paprika, and olive oil. Bring to a boil over medium-high heat.
- Carefully add the prepared onions to the boiling broth. Reduce heat to low, cover, and simmer for 30-40 minutes until tender.
- In the last five minutes of cooking, stir in fresh thyme leaves for added flavor.
- Remove onions from the pot, place on a serving platter, drizzle with broth, garnish with parsley, and serve hot.
