Instructions
- In a large pot over medium heat, melt the butter. Add onions and carrots; cook until softened (about 5 minutes).
- Stir in broccoli florets; cook for an additional 2-3 minutes.
- Sprinkle in flour and stir to coat vegetables; cook for 2 minutes.
- Gradually whisk in vegetable broth to prevent lumps; bring to a simmer.
- Stir in milk, seasonings, and shredded cheese until melted and smooth.
- Reduce heat to low and simmer for 15-20 minutes until thickened.
- Serve hot, garnished with fresh chives.
