Ingredients
- 1 lb boneless, skinless chicken breasts
- 4 tablespoons butter
- 2 tablespoons olive oil
- 1 cup panko breadcrumbs
- ⅔ cup grated Parmesan cheese
- 1 teaspoon garlic powder
- 2 teaspoons Italian seasoning
- 1 teaspoon kosher salt
- ½ teaspoon ground black pepper
Instructions
- Preheat oven to 425°F (218°C) and line a baking sheet with parchment paper.
- In one bowl, mix melted butter, olive oil, and garlic powder. In another bowl, combine panko breadcrumbs, Parmesan cheese, Italian seasoning, salt, and pepper.
- Butterfly the chicken breasts into cutlets for even cooking.
- Dredge each cutlet in the butter mixture then coat thoroughly in the breadcrumb mixture.
- Arrange on the baking sheet and bake for 20 minutes, flipping halfway through until golden brown and cooked to an internal temperature of 165°F (74°C).
- Garnish with parsley or basil if desired before serving.
