  • 1 large onion, diced
  • 1 stalk celery, diced
  • 3 cloves garlic, minced
  • 1 can (15 oz) diced tomatoes
  • 1 can (15 oz) tomato sauce
  • 1 carton (32 oz) chicken broth
  • 1 can (15 oz) Great Northern beans, drained and rinsed
  • 1 can (15 oz) kidney beans, drained and rinsed
  • 1 cup ditalini pasta
  • Seasonings: Italian seasoning, salt, and black pepper

Instructions

  1. In a large pot over medium heat, heat olive oil and cook ground beef for 3–5 minutes until browned. Drain excess fat.
  2. Sauté carrots, onion, celery, and garlic in the same pot for about 4 minutes until softened.
  3. Return the beef to the pot; add diced tomatoes and tomato sauce. Mix well.
  4. Pour in beans and chicken broth; let simmer for 10 minutes.
  5. Add ditalini pasta along with seasonings; cook for another 10 minutes until pasta is tender.
  6. Serve hot with optional garnishes such as fresh basil or Parmesan cheese.
