Ingredients
- 4 large egg whites
- 2 1/2 cups powdered sugar
- 1 teaspoon vanilla or peppermint extract
- Gel food colors – red and blue
Instructions
- Prepare a double boiler by adding water to a medium pot and bringing it to a simmer. In a heat-safe bowl, combine egg whites and powdered sugar.
- Place the bowl over the simmering water; whisk until warm and sugar is dissolved (113°F).
- Transfer the mixture to a stand mixer and whip on high for about 5 minutes until thick and glossy.
- Add extract and mix briefly to incorporate.
- Line a baking tray with parchment paper or a silicone mat. Fill a piping bag with meringue, brushing stripes of food coloring inside.
- Pipe onto the tray in desired shapes.
- Bake at 200°F for approximately 80 minutes, rotating every 20 minutes until crisp.
