- ½ cup buttermilk (or plain kefir), room temperature
Instructions
- Preheat the oven to 350°F (175°C) and line a muffin pan with cupcake liners.
- In a bowl, whisk together flour, baking powder, and salt; set aside.
- In a mixing bowl, beat softened butter and sugar until light and fluffy (about 5 minutes).
- Add eggs one at a time, mixing well after each addition. Stir in vanilla extract.
- Gradually mix in the dry ingredients alternating with buttermilk until just combined.
- Fill cupcake liners about ⅔ full and bake for 20-23 minutes or until a toothpick comes out clean.
- Allow cupcakes to cool before frosting.
