Ingredients
- 1 chicken breast (6–8 ounces)
- Salt and pepper
- 1 tablespoon olive oil
- 2 store-bought flatbreads or naan
- 1/2 cup pesto sauce
- 1 cup mozzarella cheese
- 1 cup cherry tomatoes (halved)
- 1/4 cup fresh basil leaves (chopped)
Instructions
- Pat the chicken breast dry and pound to an even thickness if needed. Season with salt and pepper.
- Heat olive oil in a large skillet over medium-high heat. Sear the chicken for about 30 seconds; reduce heat to medium and cook for about 12 minutes total or until an internal temperature of 165°F (74°C) is reached. Let rest before shredding.
- Preheat the oven to 400°F (200°C).
- On a baking sheet, spread pesto on each flatbread. Top with shredded chicken, halved cherry tomatoes, mozzarella, and basil.
- Bake for 10-12 minutes until cheese is melted and bubbly. Garnish with remaining basil before serving.
