Instructions
- Preheat the oven to 325°F (165°C).
- In a bowl, mix graham cracker crumbs, melted butter, and sugar; press into mini cheesecake pans.
- Bake for 8-10 minutes; let cool.
- Beat cream cheese until smooth; add powdered sugar and vanilla.
- In another bowl, mix heavy cream, pistachios, instant coffee, and salt; fold into cream cheese mixture.
- Spoon filling over cooled crusts; smooth tops.
- Bake for 15-18 minutes; cool at room temperature before chilling in the refrigerator for at least 4 hours.
