- 4 boneless, skinless chicken breasts
- 1 teaspoon salt
- 1 inch piece of ginger (sliced)
- 4 green onions (chopped)
- 2 cups water
- 3 tablespoons vegetable oil
- 1 inch piece of ginger (finely minced)
- 4 green onions (finely chopped)
- 1 teaspoon soy sauce
- 1 teaspoon sesame oil
- Salt to taste
Instructions
- In a pot, combine water, salt, sliced ginger, and chicken breasts.
- Bring to a gentle simmer over medium heat. Reduce heat to low and cover; poach chicken for 15-20 minutes until fully cooked.
- Remove chicken from the pot and let it rest for a few minutes before slicing.
- In a small saucepan, heat vegetable oil over medium heat. Add minced ginger and sauté for 1-2 minutes until fragrant.
- Remove from heat and stir in chopped green onions, soy sauce, sesame oil, and salt.
- Slice the poached chicken and drizzle the ginger scallion sauce over it before serving.
