  • 4 cloves garlic, chopped
  • 3 tablespoons dark brown sugar
  • 2 tablespoons lemon juice
  • 2 tablespoons spicy brown mustard
  • 2 teaspoons dried thyme
  • 1 teaspoon onion powder
  • 1 teaspoon Worcestershire sauce
  • 1 teaspoon white wine vinegar
  • 1 teaspoon mesquite-flavored seasoning
  • ½ teaspoon dried parsley flakes
  • ½ teaspoon kosher salt or to taste
  • ½ teaspoon freshly ground black pepper
  • 2 large pork chops

Instructions

  1. Prepare the pork chops by slicing them horizontally without cutting all the way through.
  2. In a mixing bowl, whisk together all marinade ingredients: olive oil, garlic, brown sugar, lemon juice, mustard, thyme, onion powder, Worcestershire sauce, white wine vinegar, mesquite seasoning, parsley flakes, salt, and pepper.
  3. Pour the marinade into a resealable bag and add the pork chops. Seal tightly and refrigerate for 6 to 8 hours.
  4. Preheat grill to medium-high heat. Remove chops from marinade and grill for about 8 minutes on each side until they reach an internal temperature of 145°F (63°C). Let rest before serving.
