- ¼ cup extra-virgin olive oil
- 4 cloves garlic, chopped
- 3 tablespoons dark brown sugar
- 2 tablespoons lemon juice
- 2 tablespoons spicy brown mustard
- 2 teaspoons dried thyme
- 1 teaspoon onion powder
- 1 teaspoon Worcestershire sauce
- 1 teaspoon white wine vinegar
- 1 teaspoon mesquite-flavored seasoning
- ½ teaspoon dried parsley flakes
- ½ teaspoon kosher salt or to taste
- ½ teaspoon freshly ground black pepper
- 2 large pork chops
Instructions
- Prepare the pork chops by slicing them horizontally without cutting all the way through.
- In a mixing bowl, whisk together all marinade ingredients: olive oil, garlic, brown sugar, lemon juice, mustard, thyme, onion powder, Worcestershire sauce, white wine vinegar, mesquite seasoning, parsley flakes, salt, and pepper.
- Pour the marinade into a resealable bag and add the pork chops. Seal tightly and refrigerate for 6 to 8 hours.
- Preheat grill to medium-high heat. Remove chops from marinade and grill for about 8 minutes on each side until they reach an internal temperature of 145°F (63°C). Let rest before serving.
